Coconut Bread Crumbs For Fish/Shrimp

I made this last night, and even impressed myself.

Coconut Bread Crumb mix

Ingredients needed:

Panko bread crumbs (Chedrui's/Mega)you will only use 1/2 box or less.
1/2 cup of sweeten coconut

Using a food grinder, grind up the coconut until it is the size of rice.
(grinding the coconut allows it to mix with the bread crumbs, and not fall off during cooking, or stick to the pan)

Mix the Panko, and coconut together.

The more coconut you add, the stronger the coconut taste will be.

If you want to make a dredge for fish/shrimp you will need the following Ingredients.
egg, beaten
Coconut bread crumb mix.

Dredge the fish/shrimp through flour.
Dredge through beaten egg next
Pat into the coconut bread crumb mix

I used a fry pan with a little veggie oil (123 Oil works well)and they came out crispy, and delicious, with a hint of coconut.
