Since I am sure I am not the only one on the island with an abundance of bananas on their property, thought I would share this really easy and delicious recipe. (Don't have the original source handy right now but can find if someone wants it)
2 large, very ripe bananas
1 cup quick oats (a bit more or less depending on size of bananas)

Mash bananas, add oats, drop by spoonful onto well greased cookie sheet and bake at 350 for 15 minutes. Result is sweet, chewy and very filling. I play around with adding in extras like cinnamon, cloves, chia seeds, chocolate chips, etc. I also make these in my toaster over, so cook at a lower temp. Kind of impossible to mess these things up.

Makes 12+ cookies (extras freeze well)
