 Chicken Enchiladas;  I made this last night for dinner. This is my first time making a Mexican dish, so wasn't sure I'd like it. I loved it.

I did have to make one change to it because I didn't have enough Jack cheese, so I added extra sharp cheddar. 

Also, when I baked the chicken, I put some taco seasoning on top of the chicken breasts.

 

The next time I make it, I would like a little more texture, so shredded carrots, and chives into the mix. I might keep making it that way, or use a small amt. of Habanero cheese to spice it up more.

Really. The only Mexican dish I have ever had is chili relleno.  There was one dish I did eat at El Moro's, but I have eaten that in the states, so didn't consider it a "Mexican" dish.

 

I don't know what I am ordering.  I wouldn't know a taco, from a burrito.

I make them similar to that recipe, but I also add cream cheese......bring on the fat.

my main problem is that I have really bad food allergies.  If any seafood is cooked using the same pan, or side of a grill, I am in deep trouble.

 

I took a sip of a drink from a straw that somebody had been eating king crab, and was in the hospital that night.  

 

So, it's self preservation, and simply not being able to ask for my food to be prepared separately  It's easier for me just to not engage..
