Chicken Enchiladas; I made this last night for dinner. This is my first time making a Mexican dish, so wasn't sure I'd like it. I loved it.
I did have to make one change to it because I didn't have enough Jack cheese, so I added extra sharp cheddar.
Also, when I baked the chicken, I put some taco seasoning on top of the chicken breasts.
The next time I make it, I would like a little more texture, so shredded carrots, and chives into the mix. I might keep making it that way, or use a small amt. of Habanero cheese to spice it up more.
