It has been a number of years since the island had Nilla Wafers, so the stampede began early to score a box or two of these gems (this is the reality of living here).
They are available only at Chedraui's.  If you don't find them in the cookie isle, there are quite a few boxes at check out.

Nilla Apple Crisp
Prep time: 20 mins Baking time:30-35 mins

8 cups thinly sliced peeled Granny Smith apples (the green ones)
1.2 firmly packed brown sugar-divided
2 tsp ground cinnamon-divided
1/3 cup old fashion oat meal OR you can use one packet of the instant oat meal (equals 1/3 cup_
1/4 cup COLD butter/margarine
25 Nilla wafers crushed
Whip cream to top.

Heat oven to 350
Toss apples with 1/4 cup brown sugar and 1 tsp of cinnamon (I like cinnamon so I add a little more)
Once tossed, into square baking dish
Combine-oats, 1/4 cup brown sugar, 1 tsp of cinnamon  and cut in butter/margarine.  It will be coarse.
Add the crushed Nilla waffers to the mix.

Spread crumb mix over top of the apples.
Test apples for softness before removing from oven.

Can be served warm or cold with a healthy topping of whip cream.

The most important thing in life is not knowing everything, it's having the phone number of somebody who does!
